Beet Salad with Goat Cheese
8 oz cooked & drained beets
2 tablespoons olive oil
1 1/2 teaspoons balsamic vinegar
1 teaspoon lemon juice
2 ounces Laura Chenel goat cheese
6 mint leaves, chopped (can substitute basil)
Salt and ground black pepper (to taste)

Directions:
  • Cube the beets into ¼ inch chunks, removing any excess liquid and pat dry
  • Toss beet chunks with olive oil, balsamic vinegar, lemon juice, salt, and pepper (to taste)
  • Crumble the goat cheese over the top, and finish with the mint garnish
  • Makes 4 servings, 175 calories per serving

Baked Cauliflower with Cheese

1 head cauliflower
3 tbsp. olive oil
1 lg. white onion, chopped
Salt & ground black pepper (to taste)
4 oz Cabot 75% Fat Free Cheddar, shredded
4 oz Deli Counter Mild Yellow Cheddar, shredded
1 oz Parmesan Cheese, grated

Directions:
  • Steam cauliflower florettes until tender
  • Saute onions in oil until opaque
  • Drain cauliflower and pat dry
  • Combine cauliflower, cheddar cheeses and onions- layering in a baking dish
  • Sprinkle Parmesan cheese on top
  • Place under broiler until cheese melts and parmesan forms a light brown crust
  • Makes 4 servings, 225 calories per serving


Flatbread with Turkey and Swiss Snacks

4 Open Flatbread Crackers (any flavor)
2 slices Alpine Lace Reduced Fat Swiss Cheese
2 slices Primo Taglio Pan Roasted Turkey
Spicy Grain Mustard

Directions:
  • Place flatbread crackers face up on a baking sheet
  • Top each with ½ slice turkey and mustard (to taste)
  • Finish with ½ slice swiss cheese
  • Broil for 5 minutes until cheese melts
  • 80 calories per topped cracker

Lightly Stewed Black Kale with Potatoes, Chickpeas, Olives & Lemon  
  • 1 bunch black kale
  • 2 cloves garlic
  • 1 medium yellow onion or shallot
  • 1 pound Sieglinde potatoes
  • 1 ½ cups cooked chickpeas
  • 1 lemon
  • ¼ cup black Kalamata olives
  • A handful parsley
  • Water or stock
  • 1 Tbsp olive oil
  • 4 oz goat feta (optional)
  • Salt and black pepper
Dice the onion, smash and mince the garlic.  Peel the lemon lightly so you have about 3 or 4 strips of peel. Wash the kale and remove any thick stems; stack the leaves and slice into strips about ½ inch in width.  Wash the potatoes and slice into ¾ inch thick rounds. 

In a large fry pan, on medium heat, warm the olive oil with the lemon peel and garlic.  Once warm, add the onions, stir and sweat for a minute or so, add the kale.  When the kale brightens slightly, add potatoes and about ½ cup of stock or water, partially cover and allow to simmer for about 15 minutes, adding more water or stock if necessary.  You want to lightly braise everything so you want some liquid but not a soup.Continues over…

Meanwhile, chop the olives roughly and chop the parsley.  After the kale and potatoes are just tender, add the chickpeas and olives, warm through and stir in parsley and add a squeeze of lemon juice.  Season lightly with salt and season generously with black pepper.  Serve crumbled with goat feta if you like or a drizzle of olive oil.

Warm Rice Salad with Roasted Squash & Caramelized Onions

  • 3 cups of butternut squash, peeled and cut into 1-inch cubes
  • 2 medium yellow onions, finely sliced
  • 2 cups cooked long grain rice
  • ⅓ cup sunflower seeds
  • ⅓ cup extra-virgin olive oil + 2 – 3 Tbsp
  • 2 Tbsp lemon juice
  • ¼ tsp sea salt
  • ¼ red or yellow pepper
  • 1 small garlic clove
  • 2 Tbsp warm water

Preheat oven to 375.

Set the onions on to cook: in a cast-iron pan warm 2 tablespoons of olive oil and gently cook the onions until very caramelized, about 45 minutes to an hour; stir occasionally.  Season with salt and pepper.

Toss the squash in a generous splash of olive oil along with a couple pinches of salt, and arrange on a baking sheet, being careful not to over-crowd it; roast for 45 minutes, until brown and starting to caramelize.  Stir or turn occasionally.

Meanwhile prepare the dressing by blending together the sunflower seeds, olive oil, lemon juice, salt, garlic and pepper, until creamy. Add a few tablespoons of warm water to thin the dressing a bit.

When everything is cooked and still warm, add the rice to a large bowl and toss with a dessert spoonful of the dressing.  Add most of the onions and most of the squash and gently toss.  Serve with the remaining onions and squash scattered on top and a drizzle of the dressing.

A 10-month court-ordered injunction against Merz North America's product Xeomin expires today, the company said in a news release.
That injunction was imposed last March after a judge ruled that employees Merz had hired away from rival drug makerAllergan, Inc. (NYSE: AGN) had used stolen confidential information while with Merz. Xeomin is a competitor to Allergan's popular wrinkle-fighting drug Botox.
CEO Bill Humphries said the injunction was a "challenge" but Merz North America, which is based in High Point, has improved compliance training and continued development on a number of new products.
"Moving into 2013 our focus will be on sales and marketing execution in the marketplace, business development and licensing, and the organic expansion of our pipeline to better serve patients and physicians," he said.

Quinoa and Vegetable Salad (Gluten-Free)




1 cup (250 mL) uncooked quinoa
2 tbsp (30 mL) fresh lemon juice
2 tbsp (30 mL) olive oil
2 tbsp (30 mL) chopped fresh basil
1 can (19 oz/540 mL) chick peas (garbanzo beans) drained, rinsed
1 can (12 oz/341 mL) whole kernel sweet corn, drained
1 can (14 oz/398 mL) diced tomatoes, drained
1 cup (250 mL) chopped red bell pepper
1/3 cup (75 mL) quartered pitted kalamata olives
1/2 cup (125 mL) crumbled feta cheese


  • Rinse quinoa under cold water 1 minute; drain. Cook quinoa as directed on package; drain. Cool completely, about 30 minutes.
  • Meanwhile, in small nonmetal bowl, place lemon juice, oil and basil; mix well. Set aside for dressing.
  • In large bowl, gently toss cooked quinoa, beans, corn, tomatoes, bell pepper and olives. Pour dressing over quinoa mixture; toss gently to coat. Serve immediately or refrigerate 1 to 2 hours before serving.
  • Just before serving, sprinkle with cheese. Garnish with basil leaves if desired.
