New Book from Stuffed Pepper Founder Discusses Why Your Gluten-Free Diet May Not be Working for You. And How to Fix It.

Madison, CT, October 15, 2015 --(PR.com)-- These days, everyone is either on a gluten-free diet, or knows someone who is. Yet, what most people don’t know is that the vast majority of people with celiac disease, the autoimmune disorder most associated with gluten, are not actually healing on the diet.

Stuffed Pepper founder, Heather Jacobsen spent more than a decade on the gluten-free diet, but still battled digestive distress, fatigue and other chronic complaints. Instead of accepting that feeling suboptimal is just part and parcel of being gluten sensitive, Heather began delving deep into the science behind gluten, grains, celiac disease and gluten sensitivity. What she discovered was a bounty of new information that is not discussed in the mainstream media or by most conventional doctors.

Her new e-book, "Going Gluten Free: 7 Surprising Facts You Should Know If You Want to Achieve Dietary Success," is written for gluten-free dieters and their doctors. Highly referencing peer reviewed medical literature, but written in simple enough terms for the layman to understand, the book provides invaluable information about the gluten-free diet that is easy to digest and enjoyable to read.

For instance, did you know that 50% of celiacs also show sensitivity to dairy? Did you know that there are parts of wheat besides gluten that could be causing you harm? Did you also know that products labeled “gluten-free” can contain some amount of gluten in them, and that the threshold of how much gluten is safe is actually controversial? These topics and more are explained in the e-book, which is available for pre-order now on Amazon at tinyurl.com/Going-GF-Jacobsen.

“Its hard to believe that up to 92% of people with celiac disease don’t heal on the conventional gluten-free diet,” says Heather. “That is, the vast majority of people who are eating 'gluten-free' for medical reasons are still not getting better! Why aren’t more people talking about this in the gluten-free community? That is the burning question I keep asking, and I hope this book will open this discussion up to more people.”

Heather will be speaking at the Gluten & Allergen Free Wellness Event near Hartford, CT on October 17th. She will address those studies that show how the vast majority of celiacs aren’t actually healing on the gluten-free diet, and explain how to modify one’s gluten-free diet in order to truly heal. Heather will also be speaking at the Natural Living Expo, in Marlborough, MA on November 15th. She will be discussing how to get the gluten-free diet right.

Readers of the e-book get a 50% off coupon for the step-by-step program, 30 Days to A Whole New, Gluten-Free You at the end of the book. Also, interested persons can receive a free gluten-free meal plan (done the right way), just by signing up for the free online magazine, Stuffed Pepper at stuffed-pepper.com. Recipes, research articles and tips on leading the gluten-free lifestyle are sent out to readers once or twice a month.
