DO CANADIANS KNOW THEIR NUMBER? Free cholesterol testing comes to Canada

Know Your Number, Know Your Risk A survey conducted by Becel® found that almost 70 per cent of Canadians – about 20 million people – don’t know their own cholesterol number . Yet it’s estimated that as many as 10 million Canadian adults have a cholesterol level that is higher than the recommended target .

Chili Pie


2 Tenderflake® Deep Dish Frozen Pie Shells
1 tbsp (15 mL) Olive oil
1 lb (500 g) Extra lean ground beef
1 tbsp (15 mL) Chili powder
1 tsp (5 mL) Cumin
1 Clove garlic, chopped
1/2 cup (125 mL) Finely diced green pepper
1/2 cup (125 mL) Finely diced onion
3 tbsp (45 mL) Flour
1 (14 oz/398 mL) Can chopped tomatoes
1 (19 oz/540 mL) Can kidney beans, drained and rinsed
Salt and pepper to taste
¾ cup (175 mL) Shredded Tex Mex cheese, divided

PREHEAT oven to 400˚F (200˚C). Bake one pie shell according to package directions for a baked pie shell. Remove from oven and set aside to cool slightly. Allow second pie shell to defrost at room temperature.

HEAT oil in a large non-stick skillet over medium -high heat. Add beef and break apart with a wooden spoon. Cook until beef is no longer pink. Drain, if necessary, and return to pan.

ADD chili powder, cumin, garlic, pepper, onion and flour. Stir to combine and cook for 1 to 2 minutes.

Add tomatoes, kidney beans, salt and pepper and cook for 3 to 5 minutes. Mixture will be thick.

FILL baked pie shell with chili mixture and top with ¼ cup (50 mL) shredded cheese. Carefully remove thawed pie shell from foil and place on top of chili, pressing down gently. It may crack slightly at the edges. Pinch or flute edge to seal top and bottom crust. Sprinkle with remaining ½ cup (125 mL) shredded cheese. Cut several slits in top crust to allow steam to escape.

PLACE on baking sheet and bake in preheated oven for 20 to 25 minutes or until cheese is melted and pastry is golden brown.

REMOVE from oven and allow to stand for 5 minutes before cutting. Serve with your favourite Mexican toppings on the side.


Increase the amount of chili powder for added heat.

Celebrating 35 years of the MS Read-A-Thon – MS Society's Longest Running Fundraising Program

Toronto, ON - January 18, 2012 — The MS Society of Canada's Ontario Division is proud to announce the 35th anniversary of its longest running fundraising program, the MS Read-A-Thon, which raises funds to end multiple sclerosis while promoting literacy to school-aged children across the province. From January through April 2012, over 300 elementary schools will host assemblies to kick-off their participation in the MS Read-A-Thon, which will connect students to the joys of recreational reading while building awareness about this important cause. Multiple Sclerosis is the most common disease of the central nervous system (the brain and spinal cord) among young adults, including children as young as 3, in Canada.

Asian Handheld Pie


2 TENDERFLAKE® Frozen Deep Dish Pie Shells

1/2 cup (125 mL) MAPLE LEAF Prime Fully Cooked and Sliced Chicken Breast or
leftover chicken, thinly sliced into ¼ inch (5 mm) wide strips
2 tbsp (30 mL) Green onion, thinly sliced
2 tsp (10 mL) Soy sauce
3 tsp (15 mL) Teriyaki sauce
1/2 tsp (2 mL) Honey
1/2 tsp (2 mL) Sesame oil
1/2 tsp (2 mL) Minced garlic
1/2 tsp (2 mL) Finely grated ginger
2 tbsp (30 mL) Grated carrot
3 tsp (15 mL) Toasted sesame seeds, divided
1 Egg, beaten


Prep Time 30 min
Total Time 45 min
Skill Level Intermediate
Serves 4

PREHEAT oven to 400°F (200°C).
REMOVE pie shells from freezer and allow to thaw at room temperature for 10 – 15 minutes.
MIX together chicken, green onion, soy sauce, teriyaki sauce, honey, sesame oil, garlic, ginger, carrot and 1 tsp (5 mL) sesame seeds and set aside.
REMOVE pie shells from foil, and gently flatten onto clean, flat, lightly floured work surface. If cracks appear in pastry, press together and repair using fingers moistened with water. Cut four 3 inch (8 cm) squares from each pie shell.
DIVIDE the chicken mixture evenly between 4 squares, mounding in the centre and leaving a ¼ inch (5 mm) pastry edge.
BRUSH edges of pastry around the filling with beaten egg. Top with remaining 4 squares of pastry. Gently press edges together, and crimp with a fork. Brush tops with beaten egg and sprinkle with remaining sesame seeds.
BAKE for 12-15 minutes, or until pastry is golden. Allow pies to rest for 10 minutes before serving.
Serve with plum sauce or sweet and sour sauce for dipping.

Soup’s on

A cold front moves in on the heels of those New Year’s diet resolutions. Time to get out the soup pot.

Roasted Butternut Squash Soup

4 garlic cloves, not peeled

2 tablespoons olive oil, divided

1 butternut squash, about 2 1/2 pounds

1 medium sweet yellow onion, cut into 1-inch pieces

2 carrots, peeled and sliced about 1/2-inch thick

4 to 6 sage leaves, thinly sliced

1/2 teaspoon salt

1/4 teaspoon pepper, plus additional pepper to taste, divided

1 (32-ounce) carton vegetable stock

1/4 teaspoon rubbed sage

Heat oven to 375 degrees. Line a 10- by 15-inch jelly roll pan with aluminum foil.

Place the unpeeled garlic on a 6-inch square of aluminum foil, drizzle with 1/2 teaspoon olive oil and seal in a packet. Set on edge of pan.

Using a large, heavy knife, cut off ends of squash. Peel using a vegetable peeler. Cut squash in half, remove and discard seeds. Cut squash into 1 to 1 1/2-inch cubes. Place squash in a mixing bowl. Add onion and carrots. Drizzle vegetables with remaining olive oil. Sprinkle with salt, pepper and sage; toss to coat. Spread in a single layer on pan. Bake, uncovered, 20 minutes. Stir vegetables and roast 15 to 20 minutes more, until very tender and golden brown.

Allow to cool slightly, and transfer to blender or food processor. Open foil packet, and when cool enough to handle, gently squeeze roasted garlic out of skin and onto vegetables. Blend until smooth, working in batches and adding a little vegetable stock if needed. Transfer to saucepan.

Stir in vegetable stock, and season to taste with salt and pepper. Heat over medium heat, stirring occasionally, until steamy. Makes 6 servings.

Bacon and Double Cheese Quiche Mini Tarts

1 Package Tenderflake® Mini-Tart Shells

3 Strips MAPLE LEAF® Bacon

2 Eggs, beaten

1/2 cup (125 mL) 18% cream

1 tsp (5 mL) Finely chopped fresh thyme

Salt & pepper

1/4 cup (50 mL) Shredded Gruyere cheese

¼ cup (50 mL) Shredded White cheddar cheese


Prep Time 25 min

Total Time 45 min

Skill Level Basic

Serves 6 (3 tarts each)

Classification Appetizer

PREHEAT oven to 375˚F (190˚C).

PREPARE mini-tart shells as per package directions for unfilled tart shells. Remove from oven and set aside to cool slightly.

COOK the bacon in a large fry pan until crisp. Remove to paper towel to drain. Crumble, or cut bacon into small pieces.

WHISK together eggs, cream, thyme, salt and pepper in a small bowl.

POUR egg mixture into cooked and cooled mini-tart shells.

SPRINKLE the cooked bacon and cheese over the egg mixture. Bake for 15 to 18 minutes or until quiche is set and pastry golden.

The whole reason I called my first album 19 was about cataloging what happened to me then and who I was then, like a photo album you see the progression and changes in a person throughout the years'.
